Ingredients

AmountIngredientNotesSubstitute
30 sheetswonton wrappers馄饨皮
200 gground pork猪肉末
8.0 gginger姜末
10 mlsoy sauce酱油
8.0 mlShaoxing wine绍兴酒
45 mlchili oil with sediment红油
3.0 gSichuan peppercorn powder花椒粉
15 mlChinkiang vinegar镇江香醋

Instructions

1

Make wontons

Mix pork, ginger, soy, and wine. Place 1 tsp filling in center of each wrapper. Fold into wonton shape. Boil in batches — 3 min after they float.

2

Red oil sauce(10 min)

Mix chili oil (with the dark sediment at the bottom), Sichuan pepper, vinegar, soy, sugar, and minced garlic. Drain wontons, toss in sauce while hot. Each wonton should be coated in a fiery, numbing, tangy red glaze.

Pro Tips for Western Kitchens

The sediment at the bottom of the chili oil jar is pure flavor — make sure to stir it into the sauce. That's where the deep chili complexity lives.
