Why we exist
Most Chinese recipes online were written for Chinese kitchens — with woks, rice cookers, specialty sauces, and ingredients from Chinatown. If you're cooking in a regular apartment with an electric stove, a trip to Trader Joe's is a lot more realistic than a trip to an Asian grocery.
WokTonight is different. Every recipe on this site is tested in a regular Western kitchen — with regular grocery store ingredients and tools you already own. No wok? We'll show you how to use a skillet. Can't find doubanjiang? Here's exactly what to use instead.
Our promises
Precise measurements
No 'a pinch of salt.' Every ingredient has US cups + metric grams so you can cook once and nail it.
Grocery store ingredients
If you can't find it at Trader Joe's, Whole Foods, or Walmart, we give you a tested substitute — not a guess.
No special equipment
Every recipe works with a regular skillet, pot, and chef's knife. Wok optional — never required.

Gluten-free, dairy-free, vegan, keto, nut-free — every recipe tells you exactly what it's compatible with.
First-hand testing notes
We write down what actually went wrong in our test cooks — the burned chilies, the gummy sauce — so you don't repeat our mistakes.
Who is behind this
WokTonight was started by a home cook who grew up eating Chinese food on two continents and got tired of recipe sites that assume you own a carbon-steel wok and a Chinatown pantry. Today, every recipe is developed and photographed in a real apartment kitchen in North America.
We are not a content farm. We don't publish recipes we haven't cooked. If a substitution doesn't work, we say so. If a shortcut ruins the dish, we warn you. That's the deal.
Editorial standards
- Each recipe is cooked at least twice before publication, once as written and once with common substitutions.
- Nutrition facts are calculated from standard USDA ingredients and are approximate.
- We disclose when a recipe is inspired by another source and link to it.
- We update recipes when readers report issues or when better ingredients become available.
