Crispy and peppery(10 min)
Toss tofu cubes in cornstarch. Heat oil in a wok. Fry tofu in batches, turning until golden-crisp on all sides (5 min). Drain. While still hot, toss with a mix of Sichuan pepper and salt. The pepper-salt should cling to the crispy surface. Serve as a snack or side.
Pro Tips for Western Kitchens
Toast the Sichuan peppercorns in a dry pan first, then grind with salt. Toasted pepper-salt is infinitely more fragrant than raw.
