Simmer beef shank, tripe, and tongue in water with ginger, scallions, and star anise for 30 min until tender. Cool completely. Slice paper-thin.

Chili oil dressing(25 min)

Mix chili oil, Sichuan pepper, soy, vinegar, garlic, and a pinch of sugar. Toss with sliced meat. Let marinate 20 min. Serve at room temperature topped with sesame seeds and cilantro.
