Toast cumin(2 min)

In a dry pan, toast cumin seeds over medium heat for 1 minute until fragrant. Crush roughly with a mortar or the bottom of a heavy pan. This fresh toasting is what gives Xinjiang lamb its signature aroma.

Sear lamb(4 min)

Heat oil in skillet over HIGH heat until smoking. Add lamb in a single layer. Sear WITHOUT moving for 1 minute, then stir-fry 2-3 minutes until browned. DO NOT overcrowd — cook in batches.

Season(2 min)

Push lamb to the side. Add garlic, cook 30 seconds. Add soy sauce, toasted cumin, and chili flakes. Toss everything together for 1 minute.

Serve(1 min)

Pile onto a plate. Sprinkle with extra cumin and sliced fresh chili if you want more heat. Serve with flatbread or rice.

Freeze the lamb for 20 minutes before slicing — it'll be much easier to cut thin, even slices.

Cumin SEEDS, not ground cumin powder. Toasting whole seeds and crushing them releases oils that pre-ground cumin lost months ago.
