Steam, don't boil

Place chicken in steam pot (or deep heatproof bowl that fits inside a steamer). Add ginger, scallions, shiitake. Place pot in steamer with water below. Cover. Steam 2 hours. NO water in the chicken pot — the bowl fills entirely from steam condensation. The broth will be crystal clear and intensely chicken-flavored.
