Fry and simmer(12 min)

Dice tofu, blanch 1 min. Stir-fry minced mushrooms until they release water and start to brown. Add doubanjiang, stir 1 min. Add tofu and 1/2 cup water, simmer 5 min. Thicken with cornstarch slurry. Finish with ground Sichuan pepper and scallions.
