Poach and sizzle(20 min)

Slice fish, marinate with cornstarch. Sauté doubanjiang, add cabbage and 3 cups water, simmer 5 min. Remove cabbage to a serving bowl. Poach fish in the broth 2 min, place on cabbage. Heap dried chilies and Sichuan pepper on top. Heat 1/3 cup oil till smoking, pour over — it should sizzle violently.
