Fry pork, then noodles(10 min)
Stir-fry pork in oil until very finely crumbled and starting to crisp (3 min). Add doubanjiang and garlic, fry 1 min until oil turns red. Add soy, sugar, and 1/2 cup water. Add glass noodles. Toss 2-3 min until noodles have absorbed the sauce. Finish with Sichuan pepper and scallions.

The 'ants' are the tiny pork bits that cling to the 'tree' (noodles). Cut the noodles shorter (6 inches) so the pork clings better.
