Fry paste separately(30 min)
This is critical: fry the chunjang in oil first for 2-3 min to remove its raw bitterness. Set aside. In the same wok, stir-fry pork until browned. Add onion and zucchini, cook 3 min. Return chunjang, add 1 cup water, simmer 5 min. Thicken with cornstarch. Pour over noodles. Serve with pickled radish.
Pro Tips for Western Kitchens
Frying the black bean paste separately is the Korean secret. Skipping this step leaves a bitter, raw bean taste.
