Instructions

Season the pork

Mix pork with minced shiitake, soy sauce, and chili bean paste. Spread evenly on a heatproof plate, pressing into a flat patty about 1/2 inch thick.

Crack eggs on top and steam(15 min)

Gently crack 3 eggs directly on top of the pork patty without breaking yolks. Steam over high heat 12-15 min until eggs are set and pork is cooked. Sprinkle with scallions. Serve directly from the plate with steamed rice.
