Instructions

Brown and braise
Brown chicken pieces in a heavy pot (5 min). Add ginger, garlic, soy sauces, bay leaves, and enough water to almost cover. Simmer 15 min.

Add potatoes and noodles
Add potato chunks. Simmer 20 min until potatoes are tender and starting to break down into the sauce. Add soaked glass noodles in last 3 min. The sauce should be thick enough to coat everything.
