Instructions

Velvet pork slivers

Toss julienned pork with cornstarch, soy, and a splash of water. Let sit 5 min. Stir-fry in hot oil 1 min — just until white. Remove.

Sauce and wraps(5 min)

In same wok, fry sweet bean sauce 30 sec until fragrant. Return pork, toss to coat. Serve in a pile surrounded by tofu skin sheets and scallion slivers. Each person wraps pork+scallion in a sheet and eats it like a taco.

Pro Tips for Western Kitchens

Tofu skin sheets are at most Asian markets. If unavailable, use large lettuce leaves or thin flour tortillas as wraps.
