Boil, crack, steep(1h 10m)
Boil eggs 7 min for hard-boiled. Remove, gently crack the shells ALL OVER with the back of a spoon — don't peel, just crackle. Return to pot with fresh water, soy sauce, tea bags, star anise, cinnamon, and sugar. Simmer 1 hour. Turn off heat and let steep at least 4 hours (overnight is best).
