Toss tofu cubes in cornstarch. Pan-fry in oil until golden-crispy on all sides (5 min). Mix ketchup, vinegar, sugar, and a splash of water for the sauce. Pour over tofu, add pineapple chunks and bell pepper. Toss 2 min until everything is glossy and coated.
