Heat soy milk until nearly boiling. In serving bowls, place dried shrimp, pickled radish, scallions, and a splash of vinegar. Pour hot soy milk into the bowl — the vinegar will gently curdle the soy milk into soft, silky curds. Drizzle chili oil. Serve with you tiao on the side.
