Marinate shredded pork with soy and cornstarch 5 min. Heat wok until smoking. Stir-fry pork 1 min until white, remove. Add oil, then ginger and chili — stir 10 sec. Add pickled greens, stir-fry 1 min. Return pork, toss 30 sec. Serve over rice. The pickled greens are salty enough — taste before adding more salt.
