Parboil noodles, drain well. Press into a hot oiled skillet — DO NOT stir. Cook 4 min until bottom is golden-crispy. Flip, crisp other side 3 min. Meanwhile stir-fry chicken and bok choy with sauce + 1/2 cup water + cornstarch slurry. Pour over crispy noodle cake.
