Instructions

Knead and proof
Mix flour, yeast, sugar, oil, and 160ml warm water. Knead 8 min until smooth. Cover and rest 45 min until doubled.

Shape and steam(15 min)
Punch down. Divide into 8 pieces. Shape each into a smooth ball. Place on parchment squares in steamer. Cover and rest 15 min. Steam over high heat 12 min. Do NOT open the lid during or right after steaming — the collapse is instant and heartbreaking.
Pro Tips for Western Kitchens
The most important rule: NEVER open the steamer lid while steaming or for 5 minutes after. Cold air causes the buns to collapse instantly.
