Blanch and dress(40 min)

If using salted jellyfish, soak 30 min to remove salt, then blanch 3 seconds in boiling water — NO LONGER or it becomes rubbery. Drain well. Toss with sesame oil, vinegar, soy, garlic, and a pinch of sugar. Chill 20 min. Garnish with sesame seeds.
