Simmer rice and stock 25-30 min until creamy. Divide into 3 bowls. Bowl 1: poach chicken slices in the hot congee 1 min, top with ginger and scallion. Bowl 2: same with fish, add white pepper. Bowl 3: stir in diced century egg, drizzle soy. Garnish all with fried shallots or peanuts.
