Render pork belly, then stir-fry(15 min)
Start pork belly in a cold wok — no oil. Render the fat 5 min until slices are golden-crisp. Remove excess fat leaving 1 tbsp. Add black beans and garlic, stir 15 sec. Add leeks, stir-fry 1 min until bright green. Return pork, add soy. Toss 30 sec. The pork should shatter when bitten.
