Blanch and flash-toss(5 min)
Blanch gai lan in salted boiling water 1 min, drain. Heat wok with oil. Fry garlic 10 sec. Add gai lan and oyster sauce. Toss 30 sec — just enough to coat. The stems should still have a slight crunch. Serve as a side to any Chinese meal.
