Sear and sauce(10 min)

Marinate beef with cornstarch + soy 10 min. Sear over highest heat 2 min (don't crowd the pan!). Remove, stir-fry peppers 2 min. Return beef, add black bean sauce + 3 tbsp water. Toss 1 min.

Slice beef ACROSS the grain — short muscle fibers = tender. With the grain = chewy. Freeze the beef for 20 min first for easier thin slicing.
